Impact of food science on the Bioeconomy: valorization of agroindustry residues and unconventional foods to obtain bioactive compounds of biotechnological interest
The project that is developed together with the PPGs: UNICAMP's PPGCA and UFSC's PPGENQ, meet the new challenges that the agricultural sector seeks, considering the need to increase food production and the more efficient use of natural resources, production of biofuels and raw materials, that is, it has the Bioeconomy as part of its actions. The partnerships, which will be developed over the 5 years foreseen for this call, will provide a continuous exchange of knowledge between researchers and advances in the development of new products, biodegradable packaging and biotechnological processes, as well as greater training in advanced analytical techniques. The general objective of this interinstitutional research project entitled “Impact of Food Science on the Bioeconomy: valorization of agroindustry residues and unconventional foods to obtain bioactive compounds of biotechnological interest” is to develop research projects in cooperation with graduate programs of excellence, seeking to produce innovation in the production of food, ingredients, inputs and biomaterials through the application of bioprocesses, modern analytical techniques, as well as the use of green chemistry for the development of new products aimed at reducing food waste, valuing and the use of waste and the promotion of a safe, healthy and sustainable diet. Innovation in the Bioeconomy will be promoted through the use of innovative and clean methodologies for food processing, based on integral and circular use, applied to the reality of the national agribusiness, including the effective fractionation and refining of raw materials, generating minimal waste and by-products of low added value.
