Innovation in food and biomaterials production
This project seeks to bring the productive sector closer to the University to enhance the results obtained in R&D and, thus, transfer them to the market either in the form of products, processes and/or services, including the filing of Patents, Utility Models and Addition of Invention. In this sense, studies for the design of new products and the promotion of inclusive, sustainable and innovative industrialization have been developed, such as: Thermoplastic extrusion of food and biomaterials; Biodegradable antioxidant films enriched with green coffee oil and residues; Potential for using persimmon to form biodegradable films; Development of ice cream based on olive oil; Application of bioactive peptides in the conservation of meat products; Utilization of residues from the cocoa industry - evaluation of the chemical composition, antioxidant and toxicological potential of teas produced from the husk of the cocoa bean; Application of conventional and emerging conservation technologies in the development of new food products based on the tamarillo fruit; Application of new methods of sensory characterization and association with emotions in the development of dehydrated mango mousse by Foam Mat Drying. Bioeconomy: sustainability, food and health
This project provides for extension actions, aligned and complementary to the PPGAN research with social, cultural and economic impact for the State of Rio de Janeiro and the country. These studies aim at the dissemination of academic knowledge in the solution of society's demands through extension actions whose philosophy is to balance these needs with environmental, economic and social solutions for the creation of sustainable capital. These projects involve: Health Safety in Food Services in Rio de Janeiro; Promotion and development of family agriculture and livestock in Brazil; development of products from organic and agroecological family farming inputs, as well as the labeling of these foods; Technical-scientific support for the strengthening, consolidation and sustainability of Agrarian Reorganization and Commercialization Policies for Family Agriculture and Fisheries production in Brazil; Analysis of indicators for the development of agriculture and livestock, in particular indicators of identity and quality of milk and dairy products provided for by legislation, meeting the demand of small farmers in the State of Rio de Janeiro. The innovative laboratory infrastructure created for this purpose has milk analyzers using infrared and ultrasound techniques, and an integrated reporting system, being a pioneer in the milk chain in the State of Rio de Janeiro. This project also includes extension activities linked to the promotion of adequate and healthy food and the creation of strategies for this purpose; Nutrition and health as basic learning; Transfer of knowledge from Food Science to Basic Education through different PPGAN actions; and studies of sensory perception of food in the nutritional education of autistic children.
